Step 1
Preheat your oven to 425°F (220°C) and lightly grease two baking sheets.
Step 2
In a large bowl, combine the all-purpose flour, finely ground oats, baking powder, salt, and ground cinnamon.

Cut the cold butter into the dry ingredients using a pastry blender until the mixture resembles coarse crumbs.

Fold in the shredded apples until evenly distributed throughout the mixture.

In a separate bowl, whisk together the half-and-half, beaten egg, and vanilla-flavored maple syrup. Pour this mixture into the dry ingredients and stir until a sticky dough forms. Be careful not to overmix.

Turn the dough out onto a floured surface and gently pat it into a circle about 1/2 inch thick.
