Step 1
Preheat your oven to 350ยฐF (175ยฐC) and grease and flour a 9x5-inch loaf pan.

In a large mixing bowl, combine the sugar, shortening, eggs, and salt. Beat with an electric mixer until the mixture is well combined and creamy.

In a separate medium bowl, mix together the flour and baking powder. Gradually add this flour mixture to the shortening mixture in 2 or 3 batches, alternating with the reserved maraschino cherry juice. Mix well after each addition until the batter is smooth.

Cut each maraschino cherry into four pieces and gently fold them into the batter along with the chopped pecans.

Spoon the batter into the prepared loaf pan, spreading it evenly.
