Cooking Instructions
Follow our step-by-step guide on how to make Mexican Enchilada Casserole with Guajillo Chile Sauce.
Step 1
Preheat your oven to 375°F (190°C).
Step 2
In a large skillet over medium-high heat, brown the ground beef, seasoning it with black pepper and taco seasoning. Cook for about 5 to 7 minutes until it's crumbly and fully cooked.
Step 3
Add the chopped onion, green bell pepper, red bell pepper, and shredded carrots to the skillet. Sauté the mixture for an additional 5 minutes until the vegetables are tender.
Step 4
In a separate bowl, combine the guajillo sauce with the white sugar. Pour this sauce over the beef and vegetable mixture, then stir in the black beans until well combined.
Step 5
In a casserole dish, layer 3 corn tortillas on the bottom. Spread half of the beef mixture over the tortillas, followed by half of the shredded cheese. Repeat the layers, finishing with a layer of cheese on top.
Step 6
Bake the casserole in the preheated oven for about 25 minutes, or until the cheese is melted and golden brown.
