Step 1
Preheat your oven to 275°F (135°C) and line a baking sheet with parchment paper.
Step 2
In a clean glass, metal, or ceramic bowl, beat the egg whites on medium speed using an electric mixer until soft peaks form, which should take about 3 minutes.
Step 3
Gradually add the sugar, cornstarch, and cream of tartar while continuing to beat on high speed until stiff, glossy peaks form, approximately 3 to 5 minutes.
Step 4
Mix in the vanilla extract and salt, beating for an additional 30 seconds until well combined.
Step 5
Using a spring-hinged scoop, portion the meringue onto the prepared baking sheet, shaping each mound into individual rounds about 3 inches in diameter. Create a small indentation in the center of each meringue with the back of a spoon.
Step 6
Bake in the preheated oven until the meringues are dry to the touch, which will take about 1 hour and 15 minutes. Once done, transfer the parchment with the meringues to a wire rack to cool.
Step 7
Allow the meringues to cool completely on the rack for about 1 hour. Once cool, gently remove them from the parchment paper and place them directly on the rack.
Step 8
When ready to serve, top each meringue with whipped cream and garnish with fresh berries.
