Cooking Instructions
Follow our step-by-step guide on how to make Mushroom Spinach Ravioli with Chive Butter Sauce.
Step 1
Start by whisking together a teaspoon of olive oil, some water, and whole eggs in a bowl until everything is nicely blended.
Step 2
Set this mixture aside for now.
Step 3
In a larger bowl, combine flour and salt, then create a little well in the center.
Step 4
Pour your egg mixture into this well and gently stir until just combined.
Step 5
Transfer the dough to a lightly floured surface and knead it for about 5 to 10 minutes until it feels smooth and elastic, adding a bit more flour or water if needed.
Step 6
Once it’s ready, wrap the dough in plastic wrap and let it rest for a while.
Step 7
While the dough is resting, heat a teaspoon of olive oil in a skillet over medium heat.
Step 8
Add minced garlic and chopped onion, cooking them until the onion softens, which should take about 2 minutes.
Step 9
Next, toss in the chopped mushrooms and let everything cook together until the mushrooms are soft and the liquid has evaporated, roughly 10 minutes.
Step 10
Once done, remove the skillet from the heat and allow the mixture to cool.
Step 11
In a separate bowl, beat the cream cheese until it’s smooth and creamy.
Step 12
Then, mix in the cooled mushroom mixture along with Parmesan cheese, mozzarella cheese, fresh spinach, a tablespoon of chives, parsley, and a pinch of cayenne pepper.
Step 13
Don’t forget to season with salt and pepper to taste! Now it’s time to roll out your pasta dough.
Step 14
Aim for a thickness of about 1/16 inch.
Step 15
Use a large cookie cutter to cut out circles that are 3 to 4 inches in diameter.
Step 16
If you want, you can roll each circle a bit thinner.
Step 17
Brush the edge of one circle with beaten egg white, then place about a heaping tablespoon of your delicious mushroom filling in the center.
Step 18
Cover it with another circle of pasta, pinching the edges to seal it well.
Step 19
For a uniform shape, you can cut again with the cookie cutter.
Step 20
Place your ravioli on a floured baking sheet and repeat this process with the remaining dough and filling.
Step 21
Bring a large pot of lightly salted water to a boil.
Step 22
Once boiling, gently add the ravioli and cook them until they float to the top, which should take about 3 to 4 minutes.
Step 23
After they’re done, drain the ravioli and set them aside.
Step 24
To make the sauce, melt some butter in a skillet over high heat, stirring until it turns a lovely brown color, which should take about 5 to 7 minutes.
Step 25
Stir in a teaspoon and a half of chives for that extra flavor.
Step 26
Now, serve this rich, buttery sauce over your hot ravioli, and enjoy the delightful combination of flavors! This dish is sure to impress, whether it’s a cozy family dinner or a gathering with friends.
Step 27
Happy cooking!.
