Step 1
In a saucepan, combine the white sugar and water. Heat over medium-high until the mixture comes to a boil, about 3 to 5 minutes. Once boiling, let it simmer for 1 minute while stirring occasionally.

Remove the saucepan from heat and stir in the fresh basil sprigs, lemon juice, and lemon zest. Allow the mixture to cool for about 20 minutes.

Pour the cooled mixture into a 9x13-inch metal baking pan or two 8-inch metal cake pans.

Place the pan(s) in the freezer for about 30 minutes. After this time, remove the basil leaves and stir the mixture well.

Freeze for 6 to 8 hours, stirring the sorbet with a fork about once per hour until it is fully frozen and has a fluffy texture.

Once frozen, scoop the sorbet into individual serving dishes and garnish with lemon slices and fresh basil leaves, if desired.
