Cooking Instructions
Follow our step-by-step guide on how to make Norwegian Potato Flatbread (Lefse).
Step 1
Begin by preheating your oven to a toasty 400ยฐF (200ยฐC) and prepare an oven-safe skillet or baking pan by lining it with aluminum foil.
Step 2
Take a potato and gently pierce its skin all over with a knife, then place it on the prepared pan.
Step 3
Roast the potato in the preheated oven until it becomes incredibly tender and can be easily pierced with a knife, which should take about an hour.
Step 4
Once done, let it cool until it's warm enough to handle.
Step 5
Scoop out the soft potato flesh into a bowl and mash it until silky smooth, using a spatula or potato ricer.
Step 6
Blend in the butter until fully combined, then add salt, sugar, and cream, mixing until the mixture is perfectly smooth.
Step 7
Cover the bowl and chill in the refrigerator for about two hours.
Step 8
Gradually incorporate flour into the mixture until the dough reaches a soft, non-sticky consistency that can be kneaded by hand.
Step 9
You should be able to roll it out thinly without it crumbling apart.
Step 10
Wrap the dough in plastic wrap and let it rest in the refrigerator for another hour.
Step 11
Once chilled, divide the dough into eight equal portions.
Step 12
Dust each portion with flour and roll it out on a well-floured kitchen towel to a thickness of about 1/8 inch or thinner.
Step 13
Heat a lightly buttered nonstick pan over medium-high heat.
Step 14
Cook each piece of Lefse in the hot pan, lightly poking the surface with a fork, until golden brown blisters appear, which should take about 2 to 3 minutes per side.
Step 15
Stack the cooked Lefse on a plate and cover them with a towel to keep warm.
Step 16
Serve these delightful treats warm and enjoy the comforting flavors of homemade Lefse.
