In a deep-fryer or large saucepan, heat the vegetable oil to 375°F (190°C).

In a mixing bowl, beat together the sugar and shortening using an electric mixer until the mixture is creamy.

Add the milk, eggs, and vanilla extract to the bowl, stirring well to combine.

Incorporate the instant mashed potatoes into the mixture, blending until smooth.
