Step 1
Place the beef in the freezer for about 1 hour to make it easier to slice. Once firm, thinly slice the beef against the grain.
Step 2
In a small bowl, whisk together 1/2 cup of orange juice, soy sauce, honey, and cornstarch until smooth.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the purple cauliflower and cook, stirring frequently, for about 5 minutes. Then, add the sliced bell peppers and carrot, cooking for an additional 3 minutes until the vegetables are crisp-tender. Transfer the cooked vegetables to a bowl and set aside.
Step 4
In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high. Add the sliced beef and cook, stirring frequently, until browned, about 2 to 3 minutes. Transfer the beef to the bowl with the vegetables, reserving the drippings in the skillet.

Add the grated ginger, minced garlic, and 2 teaspoons of orange zest to the skillet. Cook, stirring, until fragrant, about 30 seconds. Pour in the orange juice mixture and salt, bringing it to a boil. Cook until the sauce thickens, about 2 minutes.
