Cooking Instructions
Follow our step-by-step guide on how to make Paleo Coconut Curry Chicken Stir Fry.
Step 1
Start by whisking together the coconut milk, minced ginger, lime juice, fish sauce, oyster sauce, minced garlic, chile-garlic sauce, and sugar in a small bowl. This creamy mixture will be the heart of your curry stir fry, so make sure it's well combined and set it aside for later.
Step 2
In a large skillet or wok, heat the avocado oil over medium-high heat. Once the oil is shimmering, add the bite-sized pieces of chicken. Stir-fry the chicken for about 8 to 10 minutes, or until it’s no longer pink and cooked through. Once done, remove the chicken from the skillet and keep it warm while you prepare the vegetables.
Step 3
In the same skillet, add the sliced onion and curry powder to the remaining oil. Sauté for about 2 minutes until the onion becomes translucent and fragrant. Then, toss in the broccoli florets and stir-fry for another 3 minutes, allowing them to become tender yet still crisp.
Step 4
Now, pour in the coconut milk mixture and bring everything to a gentle boil. Reduce the heat to medium and let the sauce simmer with the vegetables for about 3 minutes, allowing the flavors to meld beautifully.
Step 5
Finally, return the cooked chicken to the skillet. Cover and cook for an additional 3 minutes, or until the chicken is heated through and the broccoli is perfectly tender. Give it a good stir to ensure everything is well coated in that luscious coconut curry sauce.
