Step 1
Begin by soaking the mung bean vermicelli in a bowl of hot water for 2 to 3 minutes until tender.

Once softened, drain the noodles and cut them to your preferred length, then set them aside.

Next, take dried wood ear mushrooms and soak them in water until they become pliable.

After draining, chop the mushrooms into 1-inch pieces.

In a saucepan heated over medium-high, add vegetable oil and sautรฉ minced garlic until it turns golden brown, about 2 minutes.

Remove the garlic and reserve it for garnishing later.

In the same pan, toss in chopped onion along with achiote powder, cooking until the onion is translucent, which should take around 5 minutes.
