Step 1
In a food processor, combine the drained peaches, tomato paste, red wine vinegar, maple syrup, sliced ginger, Dijon mustard, halved garlic cloves, dried oregano, smoked paprika, ground white pepper, and Himalayan pink salt.

Blend the mixture until it is well combined and thick, about 1 minute. It's fine if some ginger pieces remain visible.

Transfer the sauce to an 8-inch frying pan and heat over medium heat until it reaches a soft boil, approximately 3 minutes.
