Step 1
Start by preheating your oven to a cozy 300°F (150°C). Grab a piece of wax or parchment paper and draw a 9-inch circle on it with a pencil. Place the paper, pencil-side down, on a baking sheet, and give it a light buttering and a sprinkle of sugar to prevent sticking.
Step 2
In a large glass or metal mixing bowl, beat the egg whites until they become foamy. Gradually add the granulated sugar, continuing to beat until stiff peaks form. When you lift your beater, the egg whites should stand tall and proud, holding their shape beautifully.
Step 3
Gently fold in the sifted confectioners' sugar into the egg white mixture. Use a spatula to carefully run through the center and around the sides of the bowl until everything is well combined, taking care not to deflate the mixture.

Now, transfer this fluffy meringue into a large pastry bag fitted with a 1/2-inch tip. Pipe a 1/4-inch thick disk inside the circle you drew on the paper. Smooth the top with a knife, and then pipe another layer along the outer edge to create a lovely wall for your tart.

Bake your meringue in the preheated oven for about 1 1/2 hours, or until it’s completely dry and crisp. Once done, carefully transfer the meringue shell to a large plate and let it cool.

While the meringue cools, drain the peach chunks over a strainer set over a bowl to catch all that delicious peach juice. Sprinkle a pinch of cinnamon over the juice for a warm touch. Then, transfer the peaches to another bowl, ready to be layered later.

In another mixing bowl, beat the heavy cream until it’s foamy. Add the 1/2 teaspoon of confectioners' sugar and the vanilla extract, and keep beating until stiff peaks form. The whipped cream should be thick and hold its shape, just like the meringue.

Spread a generous layer of whipped cream over the cooled meringue shell. Next, spoon the juicy peach chunks over the cream, and don’t forget to drizzle that lovely peach juice on top. For a finishing touch, garnish with a bit more whipped cream if you like.
