Step 1
Preheat your oven to 350°F (175°C) and lightly butter an 8x10-inch glass baking dish.

Bring a large pot of water to a boil. Carefully add the peaches and blanch them for 30 to 45 seconds. Use a slotted spoon to transfer the peaches to a bowl of ice water to cool. Once cooled, peel the peaches and cut each into 8 wedges. Place the wedges in a large mixing bowl.

In the bowl with the peaches, add 1/4 cup of white sugar, 1/4 cup of brown sugar, 2 tablespoons of flour, ground cinnamon, and the zest of one orange. Gently mix to coat the peaches, then fold in the fresh raspberries. Allow the mixture to sit for 5 to 7 minutes to let the flavors meld.
