Step 1
Preheat your oven to 350ยฐF (175ยฐC). Lightly spray a 9-inch square baking pan with cooking spray.
Step 2
In a mixing bowl, combine the flour and salt. In another bowl, mix the sugar and cocoa powder. Add the melted butter to the sugar mixture and blend with an electric mixer until well combined.

Beat in the eggs and peppermint extract until smooth. Gradually add the flour mixture, stirring until just combined. Be careful not to overmix.

Pour the brownie batter into the prepared baking pan and spread it evenly.

Bake in the preheated oven for 40 to 50 minutes, or until the top is dry and the edges start to pull away from the sides of the pan. Allow the brownies to cool for about 20 minutes.

While the brownies are cooling, prepare the frosting. In a large bowl, cream the butter until smooth. Gradually mix in the powdered sugar, adding it 1/2 cup at a time. Then, add 1 tablespoon of milk, peppermint extract, and food coloring, blending until smooth. If the frosting is too thick, add an additional teaspoon of milk.

Spread the frosting over the cooled brownies and place them in the fridge to set.

For the ganache, heat cream and butter in a saucepan over low heat until it simmers. Remove from heat, add chocolate, and stir until melted and smooth. Place the ganache in the freezer for about 35 minutes, stirring every 10 minutes to prevent it from hardening too much.
Step 9
Once the ganache is ready, spread it over the brownies and let it set before cutting into squares.
