Cooking Instructions
Follow our step-by-step guide on how to make Potato Bread.
Step 1
Start by bringing the water, butter, sugar, dry buttermilk powder, and salt to a gentle simmer in a saucepan over low heat. Once everything is well combined, remove it from the heat and let it cool until it reaches a comfortable temperature between 105 and 110 degrees F (41 to 43 degrees C). This is the sweet spot for activating the yeast!
Step 2
Next, sprinkle the active dry yeast over the warm mixture and let it sit for about 10 minutes. You should see a creamy foam forming on top, which means your yeast is alive and ready to work its magic!
Step 3
Now, stir in the instant mashed potato flakes until everything is well mixed. This will add a lovely texture to your bread.
Step 4
Pour this delightful yeast mixture into the bowl of a stand mixer fitted with a dough paddle. Gradually add in 8 cups of bread flour, one cup at a time, mixing until everything is combined and a dough begins to form.
Step 5
Once your dough is coming together, turn it out onto a floured surface. Knead the dough for about 8 minutes, adding the remaining flour as needed until the dough is smooth and elastic. When it feels just right, shape it into a ball and place it in a large greased bowl. Turn the dough over in the bowl to coat the top with grease, cover it with a cloth, and let it rise in a warm spot for about an hour, or until it has doubled in size.
Step 6
While the dough is rising, prepare your baking pans by spraying two 9x5 inch loaf pans with cooking spray. Once the dough has risen, gently punch it down to release the air, then divide it into two equal pieces. Shape each piece into a loaf and place them seam-side down in the prepared pans. Cover them with a cloth and let them rise again in a warm place until they double in size, which should take about 30 minutes.
Step 7
Preheat your oven to 350 degrees F (175 degrees C). When the loaves are ready, pop them into the oven and bake for about 30 minutes. You’ll know they’re done when the tops are golden brown and they sound hollow when tapped.
Step 8
Once baked, remove the loaves from the pans and let them cool on a wire rack. This step is crucial as it allows the bread to finish setting up and enhances the flavor.
