Step 1
In a small saucepan, warm the eggnog over low heat until it bubbles, about 5 minutes. Remove from heat and stir in the butter and pumpkin puree until melted. Add the water and let the mixture cool until lukewarm, about 5 minutes.
Step 2
In a large bowl, combine the cooled eggnog mixture with 1 cup of flour, white sugar, egg, yeast, and salt. Mix well.
Step 3
Gradually add the remaining flour, one cup at a time, mixing well after each addition until the dough comes together. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.

Roll the dough into a 12x9-inch rectangle.

In a bowl, mix together the brown sugar, cinnamon, nutmeg, cloves, and allspice. Spread the melted butter over the dough and sprinkle the brown sugar mixture on top. Roll the dough into a log and seal the seam with a little water.

Cut the log into 12 slices using a sharp knife or unflavored dental floss. Place the rolls in a greased 9x13-inch baking pan. Cover and let rise until almost doubled in size, about 1 hour.

Preheat the oven to 375°F (190°C).

Bake the rolls in the preheated oven until golden brown, about 20 to 25 minutes.

Meanwhile, in a bowl, combine confectioners' sugar, cream cheese, pumpkin puree, and vanilla extract. Gradually add eggnog until the frosting reaches a spreadable consistency. Spread the frosting over the warm cinnamon rolls.
