Step 1
Start by placing the raisins in a heatproof bowl and covering them with boiling water. Seal the bowl with plastic wrap or a plate and let it sit overnight. This will plump up the raisins, making them juicy and sweet.
Step 2
The next day, dissolve the sugar in lukewarm water in a small bowl. Sprinkle the yeast over the water and let it sit for about 10 to 15 minutes until it softens and bubbles. Meanwhile, in a saucepan over medium heat, combine the milk, butter, and salt. Stir until the butter melts, then remove from heat and let it cool until lukewarm, around 105 to 110 degrees F.
Step 3
Once the milk mixture has cooled, drain the raisins and add them to the milk. Stir in the yeast mixture along with the molasses. In a separate bowl, sift together the flour, cinnamon, mace, and cloves. Gradually stir half of the flour mixture into the milk mixture using a wooden spoon, beating for 2 to 3 minutes. Then, add the remaining flour and mix until a moist dough forms.
Step 4
Transfer the dough to a flat surface and knead it for about 10 minutes, adding more flour as needed to prevent sticking. The dough should become smooth and elastic. Place it in a large, oiled bowl, cover it, and let it rise in a warm, draft-free area until it doubles in size, which should take about 1 1/2 to 2 hours.
Step 5
Once the dough has risen, lightly grease two loaf pans and set them aside. Divide the dough in half and shape each portion into a loaf. Place the loaves into the prepared pans, cover them, and allow them to rise again until they double in size, about 1 to 2 hours.
Step 6
Preheat your oven to 375 degrees F (190 degrees C). When the loaves are ready, bake them in the preheated oven for about 1 hour, or until they are golden brown and sound hollow when tapped on the bottom. Let them cool before slicing and enjoy!
