Step 1
In a blender or food processor, puree the watermelon chunks until smooth. Strain the puree to separate the juice from any solids, discarding the solids and setting the juice aside.
Step 2
In a saucepan over medium-low heat, combine 1 cup of heavy cream and the sugar. Stir until warmed, then add the mint leaves. Cover the saucepan and remove it from heat, allowing the mint to steep for 1 hour at room temperature. Strain the mixture into a bowl, discarding the mint leaves.
Step 3
In a separate bowl, whisk the egg yolks until lightly beaten. Gradually pour the mint-infused cream into the egg yolks, whisking constantly to prevent the eggs from cooking. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and coats the back of a spatula. Strain this mixture into a bowl and add the remaining 1 cup of heavy cream.
Step 4
Mix in the reserved watermelon juice until well combined. Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions.
