Step 1
Start by mixing 1/3 cup of granulated sugar with the lime-flavored gelatin in a medium bowl. Pour in 1 cup of boiling water and stir for about 2 minutes until everything is completely dissolved. Now, to cool it down, add enough ice to 1/2 cup of cold water to make a total of 3/4 cup. Stir this icy mixture into the lime gelatin until the ice has melted away completely. Pop this mixture into the refrigerator for about 25 minutes to set slightly.
Step 2
While the lime gelatin is chilling, let’s prepare the strawberry layer. In another bowl, repeat the same process using the strawberry-flavored gelatin. Mix it with 1/3 cup of sugar and 1 cup of boiling water, stirring until dissolved. No need to refrigerate this layer yet!
Step 3
Once the lime gelatin has chilled, it’s time to assemble. Grab 16 paper cups (3-ounce size) and pour in the strawberry gelatin mixture, filling each cup about halfway. Place them in the freezer for about 20 minutes to firm up a bit.

After 20 minutes, take the cups out and sprinkle 1/2 teaspoon of chocolate chips into each cup of strawberry gelatin. This adds a delightful surprise!

Finally, pour the lime gelatin over the cream cheese layer in each cup, filling them to the top. Insert a wooden pop stick into the center of each cup, making sure it stands upright. Place the cups back in the freezer and let them freeze for about 3 hours or until they are completely firm.
