Step 1
In a large bowl, combine the flour, warm water, olive oil, instant yeast, kosher salt, and white sugar. Mix until well combined. The dough will be sticky.
Step 2
Using an ice cream scoop, portion out 12 balls of dough onto a greased baking pan, gently patting them down slightly. Allow the dough to rise for about 30 minutes without kneading or punching it down.
Step 3
Preheat your oven to 425ยฐF (220ยฐC). Grease a baking pan and toss an ice cube into the bottom of the oven to create humidity while baking.
Step 4
In a separate bowl, mix together the tomato sauce, minced garlic, oregano, basil, olive oil, vinegar, and sugar until well blended.
Step 5
Spread 1 to 2 tablespoons of the tomato sauce mixture on top of each dough ball. Sprinkle with mozzarella cheese and add spinach as desired.
Step 6
Bake in the preheated oven for 15 minutes, or until the cheese is melted and the crust is golden. Allow to cool slightly before serving.
