Cooking Instructions
Follow our step-by-step guide on how to make Rutabaga Couscous Salad.
Step 1
To start, fill a saucepan with water, making sure it’s just below the bottom of your steamer insert, and bring it to a lively boil.
Step 2
Once the water is bubbling, toss in the rutabaga chunks and steam them for about 10 minutes, or until they’re tender but still hold their shape.
Step 3
While the rutabaga is steaming, grab another saucepan and bring 2 cups of water along with 1 tablespoon of vegetable oil to a boil.
Step 4
Once it’s boiling, take it off the heat and stir in the couscous.
Step 5
Cover the pot and let it sit for about 14 minutes, allowing the couscous to absorb all that flavorful water.
Step 6
After it’s rested, fluff the couscous with a fork to make it light and airy.
Step 7
In a large mixing bowl, whisk together nutritional yeast, 1/4 cup of vegetable oil, apple cider vinegar, honey, Italian seasoning, oregano, dill, black pepper, and a pinch of cayenne pepper until everything is beautifully blended.
Step 8
Now, gently fold in the steamed rutabaga and the fluffy couscous into this delicious dressing mixture.
Step 9
Give it a taste and add salt if you feel it needs a little extra seasoning.
Step 10
Enjoy the vibrant flavors and textures of this delightful dish!.
