Step 1
Preheat your oven to 400ยฐF (200ยฐC).
Step 2
In a large bowl, combine the cubed potato, red and yellow bell peppers, shallots, and both types of sausage. Drizzle with 3 tablespoons of grapeseed oil and toss to coat evenly.

In a small bowl, mix together the garlic powder, Italian seasoning, paprika, and black pepper. Sprinkle this spice mixture over the sausage and vegetable mixture, stirring well to combine.

Transfer the mixture to a roasting pan or a 10x18-inch griddle pan, spreading it out evenly.

Bake in the preheated oven for about 25 minutes, or until the vegetables are tender.

While the mixture is baking, combine the zucchini and yellow squash in a small bowl with the remaining tablespoon of grapeseed oil. Stir to coat the squash pieces.

After 25 minutes, remove the pan from the oven and add the zucchini and yellow squash on top of the sausage and vegetable mixture. Gently stir to incorporate.

Return the pan to the oven and continue baking for an additional 15 minutes, or until the squash is tender. Serve warm.
