Cooking Instructions
Follow our step-by-step guide on how to make Savory Butternut Squash Stuffed with Bacon, Dates, and Onions.
Step 1
Start by preheating your oven to 375°F (190°C). This will ensure it's hot and ready for your delicious squash.
Step 2
In a large skillet, cook the chopped bacon over medium-high heat. Stir it occasionally until it’s beautifully browned and crispy, which should take about 10 minutes. Once done, use a slotted spoon to remove the bacon, letting the excess drippings fall back into the skillet. You’ll want to keep about 2 teaspoons of those tasty drippings for flavor.
Step 3
Drain the bacon on paper towels to absorb any extra grease. In the same skillet, add the chopped onion to the remaining drippings. Sauté the onion until it becomes translucent, which should take around 5 minutes. The aroma will be irresistible!
Step 4
Now, stir the cooked bacon back into the skillet along with the chopped dates, dried oregano, and dried basil. Pour in the chicken stock to help combine everything into a flavorful filling.
Step 5
Next, prepare your butternut squash. Cut off the top and stem, just like you would for a jack-o'-lantern, and scoop out the seeds and stringy pulp. Don’t forget to cut out and discard the small button at the bottom of the squash!
Step 6
Stuff the savory date filling generously into the hollowed-out squash, then replace the top to keep all those flavors inside. Place the stuffed squash in a baking dish and pour in about half an inch of water to help it steam as it bakes. Cover the dish with aluminum foil to lock in moisture.
Step 7
Bake the squash in your preheated oven until it’s tender, which will take about 40 minutes to an hour. To check for doneness, carefully remove the top and insert a thin, sharp knife into the flesh at the bottom. If it slides in easily, your squash is ready!
Step 8
Once done, slice the squash into wedges to serve. This dish is not only visually stunning but also packed with flavor, making it a perfect centerpiece for your dinner table.
