Step 1
Preheat your oven to 375ยฐF (190ยฐC).
Step 2
In a skillet over medium heat, melt the butter and add the chopped onion. Pour in the red wine to cover the bottom of the pan and sprinkle with sugar. Cook, stirring occasionally, until the onions are tender and translucent, about 10 to 15 minutes.
Step 3
In a separate bowl, combine the heavy cream, shredded mozzarella cheese, cayenne pepper, salt, and black pepper. Mix well and then stir this mixture into the cooked onions.
Step 4
Using a cookie cutter, cut the pie crusts into 3-inch circles. Place these circles into the bottom of 12 muffin cups in a muffin tin.
Step 5
Spoon the onion mixture evenly over the tart crusts in the muffin tin.
Step 6
Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the centers comes out clean. Allow the tartlets to cool for 10 minutes before carefully removing them from the muffin tin.
