Step 1
Roll out the pie dough into a 12-inch circle on a lightly floured surface. Carefully transfer the dough to a 9-inch tart pan with a removable bottom, pressing it to fit snugly. Trim the edges, leaving a 1/2-inch overhang, and fold the edges under to create a slight lip.
Step 2
Prick the bottom of the crust several times with a fork, ensuring not to puncture through. Place the crust in the freezer to chill for at least 30 minutes.
Step 3
In the meantime, prepare the filling. Heat olive oil in a medium skillet over medium heat. Add the sliced onion and minced garlic, cooking until golden brown, about 10 minutes. Remove from heat and let cool to room temperature.
Step 4
In a medium bowl, combine the Gouda, basil, mayonnaise, Cheddar, Parmesan, Dijon mustard, oregano, black pepper, nutmeg, and salt. Stir in the cooled onion and garlic until well mixed.

Preheat the oven to 350ยฐF (175ยฐC).

Remove the tart pan from the freezer and spread the cheese mixture evenly over the bottom. Arrange the cherry tomatoes on top, gently pressing them down.

Place the tart on a large baking sheet and bake in the preheated oven for 55 to 65 minutes, or until the crust is golden brown, the cheeses are bubbly, and most of the tomatoes have burst. Allow to cool for 20 minutes before gently removing the tart from the pan and transferring it to a serving platter. Serve warm.
