Cooking Instructions
Follow our step-by-step guide on how to make Savory Chicken Spinach Roulade.
Step 1
Start by preheating your oven to a cozy 375°F (190°C). This will ensure it's nice and hot when your roulades are ready to bake. Next, grab a baking sheet and give it a light greasing to prevent sticking. Now, let’s prepare the chicken! Place the chicken breasts between two sheets of heavy plastic, like resealable freezer bags, on a solid surface. With the smooth side of a meat mallet, gently pound the chicken until it’s a uniform thickness of about 1 inch. This helps it cook evenly and makes rolling easier.
Step 2
In a saucepan over medium-high heat, warm the drained spinach until it’s heated through. While that’s happening, whisk together the egg, Parmesan cheese, and milk in a bowl until well combined. Once the spinach is warm, stir in the egg mixture and cook for about 2 minutes, stirring constantly until it thickens. Remove the pan from the heat and let the mixture cool slightly.
Step 3
Now comes the fun part! Spread about two heaping tablespoons of the spinach mixture onto each pounded chicken breast. Roll each breast up tightly into a cylinder shape, tucking in the ends as you go. Secure the ends with toothpicks to keep everything in place, and arrange the rolled chicken on your prepared baking sheet. To finish, sprinkle the Italian seasoned bread crumbs generously over the top of each roulade, adding a delightful crunch to the dish.
Step 4
Pop the baking sheet into your preheated oven and bake for about 45 minutes, or until the chicken is no longer pink in the center and the juices run clear. Once done, let the roulades rest for a few minutes before carefully removing the toothpicks. Slice them up and serve warm, enjoying the delicious flavors of chicken and spinach in every bite!
