Cooking Instructions
Follow our step-by-step guide on how to make Savory Mushroom Pizza.
Step 1
Start by preheating your oven to a sizzling 450°F (230°C).
Step 2
If you have a pizza stone, place it on the middle rack; if not, a baking sheet will work just fine.
Step 3
Next, on a lightly floured surface, roll out your pizza dough into a lovely 14-inch circle.
Step 4
Once you’ve got that perfect shape, transfer it onto a piece of parchment paper or a floured cookie sheet.
Step 5
Cover it with a kitchen towel and let it rest at room temperature while you prepare the delicious toppings.
Step 6
In a large skillet, warm up 2 tablespoons of olive oil over medium heat.
Step 7
Toss in the cremini and maitake mushrooms, stirring occasionally until they turn beautifully browned and tender, which should take about 6 to 8 minutes.
Step 8
Add in the oregano, thyme, a pinch of salt, and a dash of pepper to enhance those earthy flavors.
Step 9
Once everything is well combined, transfer the mushroom mixture to a bowl, but don’t worry about cleaning the skillet just yet.
Step 10
Now, add 1 tablespoon of olive oil to the same skillet.
Step 11
Toss in the fresh spinach along with a sprinkle of pepper, cooking and stirring frequently until the spinach wilts down, which should take around 2 minutes.
Step 12
Once wilted, transfer the spinach to a paper towel-lined plate to absorb any excess moisture.
Step 13
In a separate bowl, mix together the creamy ricotta cheese, Pecorino Romano cheese, grated garlic, and the remaining salt and pepper until everything is well blended and smooth.
Step 14
Now it’s time to assemble your pizza! Brush the pizza dough with the last tablespoon of olive oil, then spread the ricotta mixture evenly over the dough, making sure to leave about an inch of space around the edges.
Step 15
Sprinkle a generous amount of shredded mozzarella cheese on top, followed by the sautéed mushrooms and wilted spinach.
Step 16
Carefully transfer the pizza (with the parchment paper) onto your preheated pizza stone or baking sheet in the oven.
Step 17
Bake for 15 to 18 minutes, or until the cheese is bubbly and the crust is a gorgeous golden brown.
Step 18
Once your pizza is baked to perfection, take it out and let it rest on a cutting board for about 5 minutes.
Step 19
Gently remove the parchment paper, then garnish your masterpiece with a sprinkle of fresh thyme, a few grinds of pepper, and some shaved Pecorino Romano cheese for that extra touch of flavor.
Step 20
Now, slice it up and enjoy every delicious bite of your homemade pizza!.
