Step 1
Start by whisking together the flour, sugar, and salt in a large mixing bowl. This will be the base of your pie crust. Next, cut in the chilled butter using a knife or a pastry blender until the mixture resembles coarse crumbs. If you prefer, you can use a food processor to pulse the butter until it’s the size of small peas, then transfer the mixture to a bowl.
Step 2
Gradually add the ice water, one tablespoon at a time, tossing with a fork until the flour mixture is just moistened. Be careful not to add too much water; when you squeeze a handful of the mixture, it should hold together without crumbling. Divide the dough in half, shape each half into a ball, wrap them in plastic, and refrigerate for at least one hour or up to three days.
Step 3
Once the dough is chilled, roll out one ball to fit a 9-inch pie plate. Place the bottom crust in the pie plate and chill it for another 20 minutes before baking. Roll out the second ball for the top crust and set it aside.

Preheat your oven to 350°F (175°C). Now, it’s time to assemble your pie! Spread the melted peanut butter evenly over the bottom crust. Pour the chili on top, spreading it out to cover the peanut butter. Then, carefully place the top crust over the chili, pressing the edges of the bottom and top crusts together to seal them. Brush the top with the beaten egg for a beautiful golden finish, and make several cuts in the top crust to allow steam to escape.

Bake in the preheated oven for about 50 minutes, or until the crust is golden brown. If the edges start to brown too quickly, cover them with aluminum foil. Once done, let it cool slightly before slicing and serving.
