Step 1
Start by seasoning the pork chops generously on both sides with salt and pepper. In a skillet, heat 1 teaspoon of olive oil over medium-high heat. Once hot, add the pork chops and pan-fry them until they are beautifully browned and cooked through, about 2 to 3 minutes per side. To ensure they’re perfectly done, use an instant-read thermometer; the internal temperature should reach at least 145°F (63°C). Once cooked, set the chops aside on a plate to rest.
Step 2
In the same skillet, add another teaspoon of olive oil. Toss in the minced shallots and dried thyme, stirring them together until the shallots become translucent, which should take about a minute. Now, pour in the sweet port wine, blackberry juice, chicken broth, and balsamic vinegar. Let it simmer until the sauce reduces by about a third, which will take around 5 minutes.
