Step 1
Start by placing the peeled and cubed baking potatoes into a large pot. Cover them with salted water and bring to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and let them simmer until tender, which should take about 20 minutes. Afterward, drain the potatoes and allow them to steam dry for a minute or two.
Step 2
While the potatoes are cooking, heat 1/4 cup of vegetable oil in a skillet over medium heat. Add the chopped onions and sauté until they soften and turn translucent, which should take around 5 minutes. Once done, combine the cooked potatoes and sautéed onions in a large bowl. Season this mixture with 2 teaspoons of salt, ground black pepper, white sugar, and minced garlic. Mash everything together until smooth and set aside.
Step 3
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
Step 4
In a separate bowl, beat together the eggs, 1/2 cup of vegetable oil, warm water, and 1 teaspoon of salt. Gradually stir in the all-purpose flour until the dough starts to come together. Once it does, turn it out onto a lightly floured surface and knead it until smooth and elastic, which should take about 8 minutes. Divide the dough into thirds and roll each piece out to approximately 9x13 inches.
Step 5
Slice each rolled-out dough in half lengthwise, then spread the potato mixture down the center of each strip. Carefully roll each strip around the filling, gently pressing to seal the edges. Repeat this process with the remaining dough and filling until you have six logs.
Step 6
Cut each log into 1-inch slices and place them cut side down on the prepared baking sheet. Gently press the edges of the dough toward the center of the potato filling to form a bun shape. In a small bowl, beat together the egg yolks and milk, then brush this mixture over each knish to give them a beautiful golden color when baked.

Bake in the preheated oven for 35 to 45 minutes, or until the knishes are golden brown and irresistible.
