Cooking Instructions
Follow our step-by-step guide on how to make Savory Pumpkin Seed Beer Brittle.
Step 1
Start by heating the vegetable oil in a skillet over medium heat. Once hot, add the raw pumpkin seeds and stir them frequently until they turn a lovely golden brown, which should take about 10 minutes. Once browned, transfer the seeds to a bowl and mix in the ground cinnamon and cayenne pepper. Set this spicy mixture aside for later.
Step 2
Next, prepare your jellyroll pan by buttering it generously. Keep it close to your stove for easy access later on.
Step 3
In a 2-quart saucepan, combine the white sugar and beer over medium heat. Stir the mixture until it comes to a boil and the sugar has completely dissolved. Keep an eye on it and continue to cook, stirring frequently, until the temperature reaches 300 degrees F (150 degrees C) on a candy thermometer. This process will take about 40 minutes, and when done, the candy will form brittle strings when dripped into ice water.
Step 4
Once your candy reaches the hard crack stage, remove it from the heat and quickly stir in the seasoned pumpkin seeds. Pour this mixture carefully into the prepared jellyroll pan, spreading it out to form a thin layer. Allow it to cool completely before breaking it into bite-sized pieces. Store your delicious pumpkin seed beer brittle in an airtight container to keep it fresh and crunchy.
