Step 1
Start by cooking the bacon in a large skillet over medium-high heat. Turn the bacon occasionally until it’s beautifully browned and crispy, which should take about 10 minutes. Once done, drain the bacon on paper towels, but don’t forget to reserve about a tablespoon of the delicious bacon drippings left in the skillet. Crumble the bacon into bite-sized pieces and set aside.
Step 2
In the same skillet, heat the reserved bacon drippings over medium heat. Add the diced onion and sauté until it becomes slightly tender, which should take around 5 to 10 minutes. The aroma will be irresistible!
Step 3
While the onions are cooking, grab a saucepan and combine the vegetable oil, white sugar, white vinegar, ketchup, Worcestershire sauce, and salt. Bring this mixture to a boil, then reduce the heat and let it simmer for about 5 minutes, or until the sugar and salt have completely dissolved. Stir in the crumbled bacon and sautéed onions, allowing the flavors to meld together over low heat for another 3 minutes.
Step 4
In a large mixing bowl, combine the fresh spinach, sliced mushrooms, and diced hard-boiled eggs. Pour the warm dressing over the salad mixture and toss gently to coat everything evenly. The warmth of the dressing will slightly wilt the spinach, enhancing its flavor and texture.
