Step 1
Start by wrapping the extra-firm tofu in a paper towel and microwaving it for about a minute. This helps to remove excess moisture. After microwaving, squeeze out any remaining water and let it sit wrapped in a dry paper towel for about 5 minutes. Once drained, cut the tofu into bite-sized cubes.
Step 2
In a mixing bowl, combine the cubed luncheon meat, chopped garlic, and minced ginger. In another bowl, whisk together the sake, miso paste, soy sauce, and sugar until well blended.
Step 3
Heat 2 teaspoons of vegetable oil in a skillet over medium heat. Pour in the beaten eggs and scramble them until fully cooked, which should take about 5 minutes. Once done, transfer the scrambled eggs to a plate and set aside.
Step 4
In the same skillet, add the tofu cubes and cook them until they are golden brown on all sides, which should take about 5 to 10 minutes. Once browned, transfer the tofu to the plate with the eggs.

Next, add the luncheon meat mixture to the skillet and cook, stirring frequently, until the meat is heated through and the garlic is lightly browned, about 5 minutes.

In a separate skillet, heat another 2 teaspoons of vegetable oil over medium heat. Add the chopped onion, cabbage, grated carrots, and sliced mushrooms. Stir-fry these vegetables until the onions become translucent and the cabbage softens, which should take about 10 to 12 minutes.
Step 7
Once the vegetables are ready, add the scrambled eggs, browned tofu, and the cooked luncheon meat mixture to the skillet with the vegetables. Pour in the sake mixture and stir everything together to coat evenly. Cook for an additional minute until everything is heated through.
