To create a rich and flavorful turkey stock, start by grabbing a large saucepan and adding water, the turkey neck, and giblets (just leave out the liver for now).

Toss in a quartered onion, sliced celery, sliced carrot, a sprinkle of tangerine zest, whole black peppercorns, and a bay leaf for that aromatic touch.

Place the saucepan over medium-high heat and bring everything to a lively boil.

Once it’s bubbling away, lower the heat and let it simmer gently for an hour, occasionally skimming off any froth that rises to the top.
