Step 1
Place the peeled and cubed potatoes in a bowl of cold water and set aside to prevent browning.
Step 2
In a large skillet over medium-high heat, cook the ground chorizo, stirring frequently, until browned and crumbly, about 5 to 7 minutes. Remove from heat and set aside.

In a heavy pot, heat the olive oil over medium-low heat. Add the chopped celery and onion, cooking until softened, about 7 to 10 minutes.

Reserve 1/2 cup of the heavy cream. Pour 1 1/2 cups of the remaining cream into the soup and continue cooking for about 10 minutes to allow the flavors to meld.

Warm the reserved cream slightly and whisk in the flour until smooth. Slowly pour this mixture into the soup, stirring continuously. Simmer until the soup thickens, about 7 to 10 minutes more.
