Step 1
In a small bowl, whisk together the eggs and water until well combined.
Step 2
In a large nonstick frying pan or wok, melt the butter over medium heat. Pour in the egg mixture and cook without stirring for 1 to 2 minutes, or until almost set. Carefully flip the eggs and cook for an additional minute. Transfer the cooked eggs to a plate and slice them into thin strips, about 2 1/2 inches long.
Step 3
In the same pan, heat the vegetable oil over medium-high heat. Add the cold cooked rice and stir constantly for 3 to 5 minutes, until the rice is heated through and separated, but not browned.
Step 4
Add the cooked shrimp, soy sauce, sesame oil, and ground black pepper to the rice. Reduce the heat to medium and stir constantly for another 3 minutes.
Step 5
Stir in the chopped green onion and the sliced egg strips, cooking for an additional minute until everything is well combined and heated through.

Season with salt and additional soy sauce to taste before serving.
