Step 1
In a mixing bowl, combine 1/3 cup of warm water and sprinkle the yeast on top. Allow it to sit for 10 to 15 minutes until it becomes frothy, indicating the yeast is active.
Step 2
Add the olive oil, semolina flour, and kosher salt to the yeast mixture. Use your hands to mix the ingredients until they form a stiff ball of dough, adding more water if necessary to bring it together.

Transfer the dough to a floured surface and knead it for about 5 minutes until smooth. Cover it with the mixing bowl and let it rest for 30 minutes.

After resting, knead the dough for an additional 3 to 4 minutes. Divide it into two equal portions and shape each into a smooth ball. If needed, use damp hands to help smooth the dough.

Dust half of a kitchen towel with semolina flour and place the two dough balls on top. Sprinkle more flour over the balls and cover them with the other half of the towel. Let them rise until nearly doubled in size, about 2 hours.

Preheat your oven to 500°F (260°C). Line a baking sheet with foil and sprinkle it with cornmeal to prevent sticking.

On a lightly floured surface, roll each ball of dough into a very thin circle or oval shape.

In a bowl, mix the pizza sauce and chopped basil. Spread a thin layer of this sauce over the dough, leaving a 1-inch border. Scatter slices of provolone cheese over the sauce every few inches.

Fold the opposite edges of the dough toward the center to form a rectangle, pressing lightly to flatten it. Repeat the sauce and cheese layering process.

Next, fold each end of the rectangle toward the center to create a square shape. Spread another thin layer of sauce on one half and add more cheese. Fold the dough in half, overlapping the edge by about 1 inch. Transfer this to the prepared baking sheet. Repeat with the second piece of dough.

Bake in the preheated oven for 16 to 18 minutes, or until the flatbreads are well browned. Some charred spots are normal and desirable, as they mimic the traditional wood-fired cooking method. Allow to rest for 15 minutes before slicing and serving.
