Step 1
Begin by combining 1 3/4 cups of all-purpose flour and 2 tablespoons of white sugar in a large mixing bowl. Next, incorporate the cold butter pieces into the flour mixture, working it in until the texture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together and is no longer dry. Once formed, shape the dough into a ball, wrap it in plastic wrap, and let it chill in the refrigerator for about 30 minutes.
Step 2
While the dough is chilling, preheat your oven to 350°F (175°C).
Step 3
After the dough has chilled, roll it out on a floured surface until it's large enough to fit a 10-inch pie pan. Carefully transfer the rolled dough to the pie pan, trimming any excess from the edges. To prevent bubbling during baking, pierce the bottom of the crust several times with a fork and set it aside.
Step 4
In a separate large bowl, beat the eggs until soft peaks form. Gradually add in 1/4 cup of white sugar, 1 tablespoon of flour, and half of the ground cinnamon, continuing to beat until firm peaks are achieved. Gently fold in the thyme honey and ricotta cheese until the mixture is well combined. Pour this luscious filling into the prepared pie shell, smoothing the top with a moistened knife for an even finish.
