Step 1
Pat the chicken dry with paper towels and cut it into 2 to 3-ounce portions. Place the chicken in a 6-quart slow cooker.

In a large skillet, heat the corn oil over medium-high heat. Add the sliced onion and cook for 5 to 8 minutes until tender and slightly browned.

Reduce the heat and add the crushed garlic, cooking for an additional minute.

Transfer the onion and garlic mixture to a blender or food processor. Add the chipotle peppers, warm water, and bouillon powder, then blend until smooth.
