Step 1
In a small bowl, combine paprika, dark brown sugar, chili powder, ground cumin, salt, black pepper, dried oregano, white sugar, ground white pepper, and cayenne pepper. Mix well to create a spice rub.
Step 2
Generously massage the spice rub into the pork shoulder roast, ensuring it is evenly coated. Wrap the roast tightly in a double layer of plastic wrap and refrigerate for at least 3 hours, or overnight for best results.
Step 3
After marinating, unwrap the roast and place it in the bottom of a lined slow cooker. Pour in the water and add the liquid smoke if using. Cover the slow cooker and cook on the Low setting for 8 to 10 hours, or until the pork is fork-tender.

Once cooked, carefully transfer the roast to a cutting board. Discard the liquid from the slow cooker. Use two forks or your fingers to shred the pork into thin pieces, discarding any large pieces of fat.

Return the shredded pork to the slow cooker and mix it with 1 cup of barbecue sauce. Heat on Low for an additional 30 to 60 minutes, until warmed through. Serve with the remaining barbecue sauce on the side.
