Cooking Instructions
Follow our step-by-step guide on how to make Slow Cooker Jalapeno Popper Taquitos Delight.
Step 1
In a slow cooker, combine the chicken thighs, softened cream cheese, diced jalapeno peppers (with juice), green enchilada sauce, salt, and black pepper.
Step 2
Cover and cook on High for 3 to 4 hours, until the chicken is tender.
Step 3
Once cooked, shred the chicken using two forks and mix it with the sauce in the slow cooker until well combined.
Step 4
Preheat your oven to 425ยฐF (220ยฐC) and prepare a baking sheet by spraying it with cooking spray.
Step 5
On a flat surface, lay out the tortillas and evenly sprinkle pepperjack cheese in the center of each one. Add about 2 tablespoons of the chicken mixture over the cheese on each tortilla.
Step 6
Carefully roll each tortilla tightly and place them seam-side down on the prepared baking sheet. Brush the tops and sides of the rolled taquitos with vegetable oil.
Step 7
Bake in the preheated oven for 10 to 15 minutes, or until the cheese is melted and the tortillas are starting to brown. For an extra crispy finish, set the oven rack about 6 inches from the heat source and broil the taquitos for an additional 2 to 3 minutes.
