Step 1
Preheat your oven to 375°F (190°C). Lightly grease an 8x6-inch baking pan and line it with parchment paper for easy removal.
Step 2
In a large bowl, whisk together the self-rising flour, white sugar, and 1/4 teaspoon of ground cinnamon. Cut in the butter using a pastry cutter or your fingers until the mixture resembles small pebbles.
Step 3
Add the egg to the flour mixture and mix until just combined. Gently knead the dough until it comes together. Set aside 1/2 cup of this dough for the topping.
Step 4
Press the remaining dough evenly into the bottom of the prepared pan. Spread the low-sugar strawberry compote over the dough layer.
Step 5
In a small bowl, combine the reserved dough with the rolled oats and the remaining 1/4 teaspoon of cinnamon. Pinch off small pieces of this mixture and scatter them over the strawberry compote, covering it as much as possible.
Step 6
Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and the edges start to pull away from the sides of the pan. Allow to cool completely before cutting into bars and serving.
