Step 1
Preheat your smoker to 275°F (135°C).
Step 2
In a mixing bowl, combine the salt, black pepper, garlic powder, and Montreal steak seasoning. Rub this spice mixture evenly over the entire surface of the chuck roast, then place the roast in a baking pan.
Step 3
Smoke the roast in the preheated smoker until it reaches an internal temperature of 165°F (74°C), which should take about 4 to 4.5 hours.
Step 4
Once the roast reaches 165°F, wrap it in aluminum foil and continue smoking until the internal temperature reaches 195°F (90°C), approximately 1 hour more.
Step 5
After reaching the desired temperature, remove the roast from the smoker and let it rest for 20 minutes while keeping the smoker on.
Step 6
Cut the rested roast into cubes and return the meat to the baking dish. Pour the barbecue sauce and sprinkle the brown sugar over the meat, mixing well to coat.
Step 7
Return the dish to the smoker and smoke for an additional 1.5 to 2 hours, allowing the flavors to meld and the meat to caramelize.
