Step 1
Preheat your outdoor grill to high heat.
Step 2
Cut the grapefruit in half crosswise. From one half, slice a piece about 1/4 inch thick. Sprinkle smoked salt on both sides of the grapefruit slice.
Step 3
Place the grapefruit halves cut-side down on the hot grill, along with the salted slice. Grill for 2 to 3 minutes until slightly charred and grill marks appear, flipping the slice halfway through. Remove from the grill and let cool. Squeeze the juice from both halves into a bowl and set aside. Cut the grilled slice into 6 wedges.
Step 4
In a cocktail shaker, add 2 pieces of crystallized ginger and 4 wedges of the grilled grapefruit. Use a muddler to gently crush the ginger and grapefruit together.
Step 5
Fill the shaker with ice cubes, then pour in the whiskey and 3 fluid ounces of grapefruit juice. Cover the shaker and shake for 15 to 20 seconds until well chilled.
Step 6
Fill two rocks glasses with crushed ice and divide the cocktail mixture between them. Top each glass with 1 fluid ounce of ginger beer. Garnish with the remaining grapefruit wedges and pieces of crystallized ginger.
