Step 1
Preheat your oven to 350°F (175°C) and lightly grease a baking sheet with cooking spray.
Step 2
In a mixing bowl, cream together the white sugar and softened butter using an electric mixer on medium speed until the mixture is light and fluffy.

Add the freshly squeezed lemon juice, lemon zest, egg, and vanilla extract to the bowl. Mix on low speed until well combined, making sure to scrape down the sides of the bowl to incorporate all ingredients evenly.

In a separate small bowl, whisk together 1 1/2 cups of all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined. Stir in the additional 2 tablespoons of flour until incorporated.

If using, place 1/2 cup of powdered sugar in a small bowl. Scoop out teaspoonfuls of the cookie dough, roll them in the powdered sugar, and place them on the prepared baking sheet, spacing them 1 to 2 inches apart.

Bake the cookies in the preheated oven for 9 to 11 minutes, or until the edges are lightly browned. Once baked, remove them from the oven and let them cool on the baking sheet for 3 minutes before transferring them to a cooling rack.
