Step 1
Start by heating a tablespoon of butter in a skillet over medium-low heat. Once melted, add the plantain pieces and sauté them until they turn a beautiful golden brown, which should take about 5 minutes on each side. Once done, transfer the plantains to a paper towel-lined plate to absorb any excess oil.
Step 2
In a large mixing bowl, beat the egg until it's fluffy. Then, stir in the evaporated milk and melted margarine. Next, add the flour, sugar, baking powder, vanilla extract, and salt. Mix everything together until you have a smooth batter. Gently fold in the sautéed plantains, allowing their sweetness to blend into the mixture.
Step 3
Now, melt a teaspoon of butter in a heavy griddle or frying pan over medium heat. To check if the griddle is ready, drop a small amount of water onto it; if the water dances around in little balls, you’re good to go! Pour about 1/4 cup of batter for each pancake onto the hot griddle. Cook until bubbles form on the surface and the edges look dry, which should take about 2 to 3 minutes. Flip the pancakes and cook for another 2 to 3 minutes until they are golden brown on the other side. Repeat this process with the remaining batter, adding more butter to the griddle as needed.
