Step 1
In a bread machine, combine the warm water, milk, olive oil, sourdough starter, sugar, salt, bread flour, and optional vital wheat gluten in the order listed. Sprinkle the active dry yeast over the flour mixture.
Step 2
Start the Dough cycle on the bread machine. Once the cycle is complete, approximately 90 minutes later, remove the dough from the machine.
Step 3
Turn the dough out onto a well-floured surface and allow it to rest for 15 minutes.

Flour your hands and a bench knife to prevent sticking. Divide the dough into three equal sections and shape each into a round loaf.
Step 5
Place the loaves on generously floured parchment paper and cover them with large bowls, ensuring they do not touch the loaves. Let them rise in a warm area for about 60 minutes.
Step 6
Preheat your oven to 450°F (230°C) with a Dutch oven placed on the lowest rack.
Step 7
Carefully lift one loaf using the parchment paper and transfer it to the hot Dutch oven. Replace the lid.
Step 8
Bake the loaf in the preheated oven for about 20 minutes until golden. Remove the lid and continue baking for an additional 2 to 5 minutes until the top is a deep golden brown.
Step 9
Using the parchment paper, lift the loaf out and place it on a towel to cool. Repeat the baking process for the remaining two loaves.
