Step 1
Start by heating 2 teaspoons of canola oil in a large wok or skillet over high heat until it begins to smoke.

While the oil is heating, crack a couple of eggs into a bowl, add 1/2 teaspoon of water, and beat them together until smooth and well combined.

Once the skillet is hot, pour in the egg mixture and let it cook for a moment.

Then, gently scramble the eggs with a wooden spoon until they are fully cooked, which should take about 2 to 3 minutes.

Once done, transfer the eggs to a plate and set them aside.

Next, add 1 teaspoon of sesame oil to the hot pan, along with enough canola oil to coat the bottom.

Heat this mixture until it starts to smoke, then toss in some diced onion and minced garlic.
