Start by soaking the mung beans in water overnight, allowing them to absorb moisture and soften.

The next day, drain the beans and set aside the soaking water for later use.

In a large mixing bowl, combine the drained mung beans with rice flour, cumin seeds, chopped green chile, a pinch of asafoetida, fresh cilantro, shredded coconut, grated carrot, and a sprinkle of salt.

As you mix these vibrant ingredients together, gradually add the reserved soaking water, using your hands to knead until a smooth, workable dough forms.

You’ll want to use just enough water—around half a cup should do the trick.

Once your dough is ready, divide it into balls roughly the size of a tennis ball.
